  • 1 tbsp olive oil
  • 1 sweet onion, small diced
  • 2 garlic cloves, minced
  • 2 lb ground chuck
  • 2 ½ cups beef broth
  • 4 ounces mild green chiles
  • 28 oz can of diced tomatoes
  • 1 cup water
  • 2 15.5 oz cans of kidney beans, drained and rinsed
  • 1 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp chili powder
  • 2 teaspoons cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ¾ teaspoon kosher salt
  • cup tomato paste

Instructions

 

  • Add the olive oil to a Dutch oven or large pot and bring it to medium-high heat. Add the diced onion and sauté for about 2 minutes, stirring occasionally, until it becomes translucent and begins to lightly caramelize. Then, add the minced garlic and sauté for an additional 30 seconds until fragrant, being careful not to burn it.
  • Add the ground beef to the pot, breaking it apart with a spatula or wooden spoon as it cooks. Continue to cook, stirring occasionally, until the beef is mostly browned and cooked through. Once browned, carefully drain off any excess fat from the pot.
  • Next, add the diced tomatoes (undrained), mild green chiles, drained and rinsed kidney beans, beef broth, water, brown sugar, Worcestershire sauce, chili powder, cumin, onion powder, garlic powder, and kosher salt to the pot. Stir all the ingredients well to combine. Bring the mixture to a gentle boil, then reduce the heat to low, cover the pot, and let it simmer for 35 minutes, allowing the flavors to meld.
  • After 35 minutes, stir in the tomato paste. Continue to simmer the chili for another 10 minutes, uncovered, to allow it to thicken further. Taste and adjust seasonings if necessary.
