  • While the beans bake, heat one tablespoon of olive oil in a large nonstick skillet over medium-high heat. Add the diced bell peppers and onions, then sauté for 5 minutes until softened and slightly caramelized. Add the minced garlic and all the dry spices, then sauté for 1 more minute until fragrant. Remove from the heat and set aside to cool slightly.
  • In a large bowl, combine half of the baked black beans and half of the sautéed red pepper and onion mixture.
  • In a food processor, combine the remaining black beans, remaining red pepper mixture, one egg, the chipotle pepper, and the lime juice. Process until a chunky paste forms; avoid making it completely smooth to retain some texture.
  • Scoop the pulsed mixture into the large bowl with the whole black beans. Add the bread crumbs and shredded cheddar cheese, then mix everything thoroughly by hand until well combined and cohesive.
  • Use a ½ cup measurement to form 6 uniform patties, each about 3 ½ inches wide and ¾ inch thick. Heat a large sauté pan over medium-high heat with a generous drizzle of olive oil. Sauté 3 patties at a time for 5 to 6 minutes on each side until they are caramelized and cooked through.
